Puzzled by too many symptoms!

I'm new to these boards so thank you for letting me join ... and I've never tried to explain all this to a gp as I find it's always very rushed at the GP's and I always feel they just want to give you a prescription and out of the door. I'm not sure whether my symptoms relate to an autoimmune disease or maybe food intolerance or something else so I thought I'd jump straight onto the autoimmune boards to see if my symptoms ring any bells. It might help me to make the leap to go to the doctors. Thanks. I'm 50 years old and a woman.

I have recurrent bouts of illness, and in between rarely feel well ... normally feel tired and with quite painful joints (these take it in turns but hips and knees are worst at the moment). I do work but i work from home and often have to go to bed in the afternoon. I have diarrhea most mornings but that settles down during the day. This has been going on for a few years but gradually getting worse I think.

During the more severe bouts of illness which occur every few weeks I feel dreadful, really fluey and sometimes get bad digestive symptoms eg worse diarrhea, plus nausea and vomiting. This seems just like gastroenteritis so I'm not sure if I'm just picking up more bugs than normal ...

During these more severe episodes I get a symmetrical flat pink rash on each side of my neck and chest.
