Converting from "queen" to twin beds in a '04 Safari

Hello All, There is a very recent post here with the opposite question, but we want to convert to twin beds. And, in answer to "why?", this sums it up- Twin Beds: The Opinion of an Airstream Couple - Weaselmouth





The issues I see are relocating the electrical panel, reconfiguring the under bed storage, and removing some cabinetry. Probably stuff I haven't thought of. Anybody done this and have advice?
