Bathroom caulking

Hi All we are finishing up with re plumbing our '75 Overlander RB and when we've pressure checked the new Pex we will be re-caulking the bath and sink etc. The old stuff appeared to be a mixture of POs silicone and latex caulks but we are wondering what other people recommend for long term and ease of application.
