Bypass for water heater

I have a new 2015 AS that has a single valve for a winterizing bypass. I assume it is a three way but, for the life of me, I cannot understand how this will work to prevent antifreeze from entering the water tank. I asked my dealer and he put forth an explanation that made no sense at all.

Can anyone explain how this works?
